SYNOPSIS Mayela and Doña Rosa each own their own restaurants, each with different recipes and concepts. However, they both seek to create disruptive moles with organic and unique products, sourced through fair trade practices from women. Additionally, they use escamoles in their most unique recipes... This is where ant and insect expert Mario Méndez will tell us all about the properties of Mexican caviar—escamoles—and why they are so exquisite.

Vera Ruiz Acevedo, Michael James Wright They are producers and documentary filmmakers from Lanzando Lázaros, a Mexican company committed to the preservation of cultural heritage through cinema. They have worked as director and producer on Purificación por fuego (2023), Momias de Quinto (2022), El nidal (2021), winner of the Biznaga de Plata in Málaga, and Cocina de herencia (2020). Wright is known for his photographic work published in National Geographic, as well as the photographic exhibition Tierra ósea, presented at the Festival Internacional Cervantino. Ruiz was an alumna of the Rotterdam Lab (IFFR) 2021 and will debut as a director in 2025 with the project Moles y escamoles.
