The truffle, a capricious fruit that is difficult to domesticate. It grows out of sight and depends on the instinct, training and sense of smell of the animals to harvest it. To know and claim a sustainable cultivation, respectful with nature and which is also like a ‘virus’ that creates a certain form of addiction in some producers for whom the truffle is almost always more a way of life than a way of earning it.
